Ingredients
  

  • 1 cup Brown rice Adds fiber and a nutty flavor.
  • 2 medium Sweet potatoes Peeled and diced for natural sweetness.
  • 1 can (15 oz) Black beans Rinsed and drained for protein and fiber.
  • 1 medium Bell pepper Chopped for crunch and color.
  • 1 small Onion Diced to add depth of flavor.
  • 2 cloves Garlic Minced for aroma and taste.
  • 1 teaspoon Cumin Enhances the dish with warm flavor.
  • 1 teaspoon Chili powder Adds a hint of heat.
  • to taste Salt and pepper For seasoning.
  • 2 tablespoons Olive oil For sautéing vegetables.
  • to taste Fresh cilantro Chopped for garnish.
  • as needed Lime wedges For serving.

Instructions
 

  • Peel and dice the sweet potatoes into half-inch cubes. Set aside.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice and a pinch of salt. Reduce heat to low, cover, and simmer for 40-45 minutes.
  • In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, sauté for 3-4 minutes until soft.
  • Add minced garlic and cook for an additional minute. Then, add the sweet potato cubes and cook for 10-12 minutes until tender.
  • Add the rinsed black beans, cumin, and chili powder to the skillet. Stir well and cook for another 5 minutes.
  • Once the rice is cooked, fluff it with a fork and add it to the skillet. Gently fold everything together and adjust seasoning with salt and pepper.
  • Let it cook for an additional 2-3 minutes to meld flavors. Remove from heat and garnish with fresh cilantro and lime wedges before serving.

Notes

This dish is versatile; feel free to add other vegetables or protein sources to suit your taste.
