Ingredients
  

  • 3-4 pounds Chuck roast Ideal for slow cooking, becomes tender and juicy.
  • 1 packet Ranch dressing mix Adds a creamy, savory flavor.
  • 1 packet Au jus gravy mix Brings a rich, beefy taste.
  • 1 cup Beef broth Keeps the roast moist while cooking.
  • 1 jar Pepperoncini peppers Adds a tangy kick.
  • to taste Salt and pepper For seasoning the roast.
  • 1 tablespoon Olive oil Optional, for searing the roast.

Instructions
 

  • Let the chuck roast sit at room temperature for about 30 minutes before cooking.
  • Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on each side for 3-4 minutes until browned.
  • In the same skillet, add ranch dressing mix and au jus gravy mix, stirring to combine. Pour in beef broth and mix well.
  • Transfer the seared roast to a slow cooker or Instant Pot. Pour the seasoning mixture over the roast and add pepperoncini peppers on top.
  • For slow cooker: Cook on low for 8 hours or high for 4 hours. For Instant Pot: Pressure cook for 60 minutes and allow natural pressure release for 15 minutes.
  • Once cooked, remove the roast and shred it using two forks. Return the shredded meat to the pot and mix with the juices.
  • Serve the Mississippi pot roast warm, with your choice of sides.
