Ingredients
  

  • 1 pound Steak (sirloin or ribeye) For tenderness and flavor.
  • 1 cup Long-grain white rice Cooks fluffy and absorbs the sauce.
  • 2 cups Shredded queso cheese Or a blend of cheddar and Monterey Jack.
  • 2 cups Chicken broth Adds depth to the flavor.
  • 1 medium Onion, finely chopped Enhances overall taste.
  • 2 cloves Garlic, minced For a fragrant kick.
  • 1 medium Bell pepper, diced Adds color and sweetness.
  • 2 tablespoons Olive oil For sautéing the vegetables and steak.
  • 1 teaspoon Cumin For seasoning.
  • 1 teaspoon Chili powder For seasoning.

  • a handful Fresh cilantro, chopped For garnish and freshness.

Instructions
 

  • Pat the steak dry and season both sides with salt, pepper, cumin, and chili powder.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the steak for 4-5 minutes on each side until desired doneness. Remove and let rest before slicing.
  • In the same skillet, add another tablespoon of olive oil if needed. Sauté the chopped onion and minced garlic until fragrant, about 2-3 minutes.
  • Add the rice to the skillet, stirring to coat with oil and vegetables. Toast the rice for 1-2 minutes.
  • Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed.
  • In a medium saucepan, combine shredded queso cheese with a splash of milk over low heat, stirring until melted and smooth.
  • In the skillet with the cooked rice, add sliced steak and diced bell pepper. Fold in the creamy queso sauce and cook for an additional 2-3 minutes over low heat.
  • Serve warm, garnished with chopped cilantro and a squeeze of lime juice if desired.
