Instructions

  • Wash the broccoli florets thoroughly and cut them into bite-sized pieces if using fresh broccoli. Cut the chicken breast into small cubes.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through. Season with salt and pepper.
  • Remove the chicken from the skillet and set aside. In the same skillet, add the broccoli florets and sauté for about 3-4 minutes until bright green and slightly tender.
  • While cooking the broccoli, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions, usually about 8-10 minutes for al dente. Drain the pasta, reserving a cup of pasta water.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Return the cooked chicken and broccoli to the skillet, then add the drained pasta and mix well.
  • Pour in the heavy cream and stir to combine. Let it simmer for a couple of minutes to thicken. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
  • Sprinkle in the grated Parmesan cheese and mix until melted into the sauce. Taste and adjust seasoning with more salt and pepper if needed.
  • Serve immediately, garnished with fresh herbs if desired.
