Ingredients
  

  • 4 medium Potatoes Peeled and diced, Russet or Yukon Gold work best.
  • 1 medium Onion Chopped, adds sweetness and depth.
  • 2 stalks Celery Diced, brings crunch and flavor.
  • 1 large Carrot Diced, adds color and sweetness.
  • 3 cloves Garlic Minced, enhances overall flavor.
  • 4 cups Chicken or Vegetable Broth Liquid base for the soup.
  • 1 cup Heavy Cream Gives the soup its creamy consistency.
  • 1 teaspoon Smoked Paprika Key spice for authentic Cajun flavor.
  • 1/2 teaspoon Cayenne Pepper Adjust to taste for heat.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Black Pepper To taste.
  • 1/4 cup Fresh Herbs Chopped parsley or green onions for garnish.

Optional Ingredients

  • 1 cup Andouille Sausage Sliced and sautéed for a smoky kick.
  • 1 cup Bell Peppers Diced, for added sweetness and color.
  • 1-2 leaves Bay Leaves For subtle depth of flavor.
  • 1 cup Spinach or Kale For added nutrition and color.
  • to taste Hot Sauce For those who love heat.

Instructions
 

  • Peel and dice the potatoes, chop the onion, celery, and carrot, and mince the garlic.
  • In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until softened, then add the minced garlic and cook for another minute.
  • Add the diced potatoes and broth to the pot. Stir and bring to a boil. Reduce heat to a simmer and cook for 15-20 minutes until potatoes are tender.
  • Blend the soup using an immersion blender until creamy, or transfer in batches to a regular blender.
  • Stir in the heavy cream, smoked paprika, cayenne pepper, salt, and black pepper. Adjust seasoning to taste.
  • Serve hot, garnished with fresh herbs.
