Ingredients
  

  • 1 cup Short-grain rice Sticky rice that holds together well when cooked.
  • 1.5 cups Water For cooking the rice.
  • 0.5 cup Oil High smoke point oil like vegetable or canola oil for frying.
  • 1 teaspoon Salt Enhances the flavor of the rice.
  • to taste Optional seasonings Spices like garlic powder, onion powder, or chili flakes.

Instructions
 

  • Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
  • Soak the rinsed rice in water for about 30 minutes to allow the grains to absorb moisture.
  • In a medium saucepan, combine the soaked rice and 1.5 cups of water. Bring to a boil over medium heat.
  • Once boiling, reduce heat to low, cover, and let simmer for 15 minutes. Turn off heat and let sit, covered, for another 10 minutes.
  • Spread the cooked rice on a baking sheet or large plate to cool for at least 30 minutes.
  • Heat 0.5 cup of oil in a large skillet over medium-high heat. Once hot, add the cooled rice in an even layer.
  • Fry the rice for about 5-7 minutes, flipping halfway through until golden brown and crispy.
  • Transfer the fried rice to a bowl lined with paper towels to absorb excess oil. Season with salt and any optional seasonings while hot.

Notes

Best served fresh, but can be stored in an airtight container in the refrigerator for up to 3 days.
