Ingredients
  

  • 2 cups Cooked chicken Shredded or chopped, can use grilled, roasted, or rotisserie chicken.
  • 1 ripe Avocado Should yield slightly when pressed.
  • 1/2 cup Diced celery Adds crunch and freshness.
  • 1/4 cup Red onion Finely chopped for flavor.
  • 1/4 cup Plain Greek yogurt Healthier alternative to mayonnaise.
  • 1 tablespoon Lemon juice Prevents avocado from browning.
  • to taste Salt Enhances flavor.
  • to taste Pepper Enhances flavor.
  • optional Fresh herbs Such as cilantro or parsley for added flavor.

Instructions
 

  • Prepare the chicken by shredding or chopping it into bite-sized pieces.
  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork and add lemon juice.
  • In a large mixing bowl, combine the chicken, mashed avocado, diced celery, and red onion. Mix gently.
  • In a small bowl, mix Greek yogurt with salt and pepper to taste. Add to the chicken mixture and fold gently.
  • Taste and adjust seasoning if needed. Serve immediately or chill in the fridge for a bit.
